Twin Cities Live - Hot Chocolate Cookie

It is day 5 of 12 Days of Cookies and Elizabeth is back at "Something Sweet by Maddie Lu" to try a Hot Chocolate cookie. This one looks so yummy and was paired with our personal favorite, Salted Caramel Espresso ice cream! 

Hot Chocolate Cookies

4oz butter
12oz chocolate chips
1/4 tsp salt
1/4 cup cocoa
1 3/4 cups ap flour
1 1/4 cup brown sugar
1 1/2 tsp baking powder
3 eggs
1 tsp vanilla
10 large marshmallows

Directions:

Melt butter and chocolate chips and allow to cool
Combine dries in a bowl and set aside
Cream brown sugar, eggs, vanilla until smooth
Add in the melted chocolate mixture
Add dry ingredients slowly
Chill for 1 hour
Scoop into 1.5in balls and bake 10 minutes at 300 degrees.
Cut the marshmallows in half
Pull cookies out of the oven and place a half marshmallow on top
Put back in the oven and bake an additional 3-4 minutes
